Story Behind The Label
The Fruit
Grown on our Estate at Whistler Wines, Seppeltsfield Road, Stone Well, Barossa Valley. The Shiraz is a combination of our original plantings from 1994, with three different clones of Shiraz- Kalimna 3c, 1654 and BVRC30. The Cabernet Sauvignon is clone D3V14 planted in 1997 on a lovely south-east facing slope with lots of broken quartz in the soil.
Winemaking
Traditional open top fermentation using wild yeast, hand plunging and gentle pressing before going to oak. This wine was matured in 30% new French oak puncheons along with 70% older French oak for 16 months before blending and bottling with no fining. The final blend is 75% Shiraz and 25% Cabernet Sauvignon.

Recommended Cellaring: Drinking wonderfully now, but will cellar well for up to 15 years.
